Prepares Intructions For Aide of House Wives Worthy of Consid-^ eration
A well known authority in New York City has prepared and issued the following suggestions relative to tbe canning of edibles worthy of the consideration of every resident of Nas- dau county.
Friuts and vegetables are plenti¬ ful. The price of sugar has risen. Fruits can be canned without sugar.
Use quart glass Jars with tin tops, costing about 52 cents a dozen. Have new rubber rings. Fill jars with wa¬ ter, put on rings and covers and turn them upside down. If they leak they are not airtight. If air gets In, con¬ tents will not keep.
Wash pars. Wash fruit. Pare peaches and pears. Can wbole or cut in halves. Pack In jars. Put a cloth In tbe bottom of a large kettle, stand tbe jars on the cloth and flll tbe Jars to the top with cold water. Put on the rings and place covers on and fasten about half way. Pour cold wa ter into kettle, enough to come very near tbe top of Jars. Cover the ket¬ tle and bring slowly to boiling. Boil until fruit is cooked through from thirty to forty-flve minutes. Hard fruit will require more tinif.
Have only enough Wre to keep the water boiling gently. More than this is a waste of either coal or gas, and the rapid boiling is likely to crack the Jars. When done, remove from tbe boiling water and fasten covers very tightly at once, without having taken covers off. This is important, for no air should enter Jars after boil¬ ing begins.
A wa'jh boiler or two dish pans (one to be used as a cover) make a good kettle for this kind of canning. This method applies to plums and to¬ matoes, which are now plentiful and cheap.
Vegetables may be canned by tbe same process, a little salt being added to each Jar. Cook tomatoes flfteen to twenty minutes. Beans and otber hard vegetables one and a half hours or more.

Freeport Yacht Club Closing
The official closing of the South Shore Yacht Club for the season will be celebrated by a monster dinner pnrty October 1. Grent preparations are being made for the affair, whicb will be on an elaborate scale.
