SANITARY COW BARN.
Essentials Required For the Production of High Grade Milk.
In nil Ulnstrated address during farm¬ ers' week nt the New York State Col lege of Agriculture Snmuel P. Stewart of Orange couuty, N Y., etnptiasized the following points:
A sanitary cow bam requires but three csseutiaLs: Cleanliness,- fresh air and light—that is, a building so con structed that It can be readily kept clean, a building planned with flues providing an abundance of frosh ulr. Tent shafts of sufficient capacity to re move the foul air and windows the
Tilly Alcartra. a pure bred. reKls- tcred Holateln-Friesian cow owned by A. W. Morris & Sons' corpora¬ tion of California, has Justly won the title of champion milk producT by BlvhiK 30.45':.6 pounds of milk and Dol.3 pounds of butter fat In one year under Bcmiofflclal test. This makes her the greatest milk cow in the world, although her butter fat production has been exceeded by severnl cows. Tilly Alcartra is now the only cow In the world that has ever produced over 30,000 pounds of milk In one year. She is a nne type of Holsteln cow, not particu¬ larly large, with an udder of such mediocre size that it would count against her in the show ring, but she certainly _ has the capacity somewhere to' manufacture and store Immense quantities ot milk.
proper size to provide nt least six ttquare feet of glass surface for ('a<'!i cow.
It is not necessary to conflne onosolf to nny particular type of construction or the uscdf nny Kpocial kind of uui terlal to erect a building for tlie \<v<> ductiou of clean milk. The barn run be of frame covered ou the outside with sliiii^rlc.«. cliiiiiio.'irds. stnccn i<v built of brick, stone, hollow tile, re- enforced concrete, in fact, tliere is no iijiil, erial use<l for other buildings that cannot be used for a inilkiujj baru.
Tlie inside of the biiildiiif,'. ceilings, side walls, lioor, etc., .should be so coii- ¦Btructed that tiicy present a smootli : '(Surface. Ccmeut lends Itself more I Teadiiy than any otlier material for the Interior finish. It Is easily npiilied and for floors, consideriiig lirst cost and cost of repairs, is the most dtssir nble kind of tloor to use. The side walls and ceiling can be ceiled witb wood, or a more permanent flnJ.sli would be cement troweled to a smootlj surface, coves formed in nil vertlca! angles, and nt the intersection of floor nnd celling witli side walls. All coi¬ ners should be rounded.
Windows nnd door frames are made flush with t! .,• ins?de finish. Doors are constructed of pluln surfaces with¬ out beading or panels. In fact, thu entire interior should be plain and smooth so the whole can be readily flushed and washed with water nnd kept free from dust nnd dirt. If de¬ sirable to construct a fireproof build¬ ing hollow tile, brick or re-enforced concrete can be used.
Pasteurizing Milk. -Milk is-pasteurized when It is heated to a point that will kill most of the bacteria it contains. All tbe harmful species are destroyed If milk Is heat¬ ed to IGT) degrees for a few seconds, the time necessary to i)n8s througli the machine. If heat Is applied for twenty minutes nt 145 degrees or tliirty minutes at 140 degrees the same purpose Is accomplished. Special ma cliinery Is made to accommodate these temperatures and time. J'lie flrst iiroc- es:i is called the "flash" system and .is not uow considered as effective as the system which holds the milk nt a tem perature of UO degrees to 145 degrees for thirty minutes.
Milking a Fresh Cow. Many a promising cow has been ruined by beinj:; milked Improperly after (-alvliig, lu-r org.-ms become en l;:rt,'ed and weakened. Previous to pnrtuiition she should have a little grain juid just enough hay to keep her slightly lax.-itlve, but no succulent feed. After she has calved let the calf take the flrst milk. If the udder is hard nnd e,ilu>d massage It with the hand, usini; Inrd. or, better, camphor nte<l ointment, nnd let the cnlf suck frequently the first dny. The knead Ing It gives with Its nose greatly hastens tho breaking up of the ndder.
It Pays to Test CowC
"Does it [lay to test?" asks a young
breeder, who says he now has six fine
nre bred covi-s nnd twelve grades.
es, it pays to test and pays^blg. and
the main pnyuient comes In n man's
ruing how little he really knows
nliont his cows nud their Indlvldaal ca
pncity. When a mnn realizes his own
Icnornnce he Is ready to learn, and not
till tlien. nnd tbere is nothing that will
so quicken n man's desire to become
acquainted with his cowa as will the
conduct of official and aemiofflclal tests
