The specific organism or germ, tbe cause of the V*oot and Mouth disease, has not yet been discovered. Probably within a week after tbe germ enters tbe system, constitutional symptoms appear in the form of fever, malaise, loss of weight, etc., but what is still more characteristic, the local manifes¬ tations of tbe disease present them¬ selves; there sppears in the mouth a veaicqlar eruption similar to small wa. tor bliaters, which end in ulceration. Tba aruptloB also appears between ttae toss and sometimes on tbe teats and adder oC tbe cow. It is these local symptoms which have suggested tbe name of Foot and Month disease.

The disease is contracted by actual contact with infected animals or otber media, as well as from Infected milk taken raw.
Tbe fact that the organism haa not yet been identified makes it more dUDcult to decide as to tbe means by which in¬ fection is transmitted. It is quite proper to decide tbat milk from infected cows is unfit to drink,at leastuntil it has been subjected to beat to destroy tbe organ¬ ism. Fortunately, the means by which this may be accomplished are simple and practically without expense and consist in boiling and pasteurization. Boiling is more easily and quickly per¬ formed and more available in emer¬ gencies but the temperature required (212* F.) is apt to injure certain of the nutritious properties of milk. The temi)erature employed In pasteuriza¬ tion is much below the boiling point and while It renders the bacteria pres¬ ent quite harmless it does not mate¬ rially injure the nutritive value of the milk. It is employed as follows: Bot¬ tles containing milk, and carefully seal¬ ed, are placed in a pan or receptacle containing water which is raised to a temperature of 150" F. and kept at this degree of heat for 20 minutes. The bottles are then removed nnd placed In the ice box close to the Ice.
