TOM TURKEY & TOTS: Dr. Charles W. Laffin, Jr., President of
State University of New York at Farmingdale, son Kevin, a student
in the Campus Nursery School and fellow classmates, view the main
event on Thanksgiving Day. The Nursery School, which has been at
Farmingdale since 1967, annually gives children from Babylon,
Amityville, Farmingdale.Wyandanch, Huntington, and surrounding
communities, who are enrolled in the school, a special Thanksgiving
party with a Tom Turkey as the special guest.
Nassau County Commissioner of the Department of General
Services, Francis E. O'Connor (right) and Nassau County Chairman
of the Board of Assessors, Abe Seldin (left) look over the IBM
computer which will be used for the Department of Assessment
project to convert the files containing data on all 410,000 parcels of
property in Nassau County.
This new system will enable information about any parcel of
property in Nassau County available within three seconds of a
request and will update the facts on individual properties on a daily
basis.

Thanksgiving Poem
'TWAS LOVELY.'
(Apres Thanksgiving Dinner)
I was up at four, the day before
To cook the mushrooms and
cranberries and
Celery and onions for the stuffing;
To make a list, long by a mile
Of all the things you needed,
while
You got ready for the»feasting.
Then Mike and Joan forgot them
home,
But never mind - 'twas lovely?
As the big day dawned
Pop hacked and yawned,
But by and large was willing,
To pack the car with bags and
jars
Of mushrooms and cranberries
and
Celery and onions for the stuffing:
With roasted nuts and plump
chestnuts
And milk and eggs and
. Pea,rs and oranges and apples;
The cutting board and turkey
platter
And lots more of thisa and thats.
But never mind - 'twas
lovely-
For Baby Sue we had some
mittens
And a photograph of the little
kitten.
For her mom and dad some silver
- sterling
To celebrate a second yearling,
All prettied up with ribbons and
bows - 'twas lovelyf
Finally, we closed the gate
And left 556 at eight
To start upon our journey.
Over the river and through the
woods
(and parkways and thruways and
bridges).
But Pop was happy as we sped
along
And full of smiles, as we clocked
the miles.
He let out a whoop as we made
the loop
On the route from Binghamton to
Vestal - 'twas lovely still.
We pulled up the car, and
unloaded the jars
Of mushrooms and cranberries
and
Celery and onions for the stuffing;
With roasted nuts and plump
chestnuts
And milk and eggs and
Pears and oranges and apples;
The cutting board and turkey
platter
And lots more of thisa and
thata.
We cluttered the kitchen and
living room too,
But never mind - 'twas lovely;
A hug for the baby, a quick kiss or
two and
We rolled up our sleeves - what
more left to do?
Potatoes to peel and turnips to
slice,
We chatted and laughed - Joanna,
it was nice.
Thanksgiving Menu Have A Heart!
the cavity of each zucchini half
with the mixture. Place stuffed
zucchini in an oiled shallow
baking pan. Bake for 30 minutes.
Yield: 4 servings.
SCALLOPED POTATOES
4 cups thinly sliced, peeled raw
potatoes
1 onion, peeled and sliced thinly
1 tablespoon chopped parsley, if
desired
3 tablespoons flour
Vs teaspoon pepper
1 y-i teaspoons salt
3 tablespoons margarine
1 V2 cups skim milk
Preheat oven to 350 degrees F.
In a lightly oiled casserole,
place a layer of potatoes.
Sprinkle with flour, then place a
layer of onions. Sprinkling each
layer with flour, alternate
potatoes and onions until all are
used. Heat the milk and
margarine together and pour
over the potatoes. Cover
casserole and bake for l hour,
then remove cover and bake
another Vfe hour to brown.
Yield: 6 servings
WILLIAMSBURG ORANGE
WINE CAKE
The wine is in the frosting. A
delicious tasting cake.
VS cup margarine
1 cup sugar
4 egg whites, unbeaten
2 tsps. grated orange rind
1 tsp. vanilla extract
1 cup seedless golden raisins
Vz cup chopped walnuts
2 cups sifted cake flour
1 tsp. baking soda
1 cup buttermilk
y-i tsp. salt
Preheat oven to 350 degrees F.
Cream the margarine and
sugar until fluffy. Thoroughly
blend in the unbeaten egg whites,
orange rind, vanilla, raisins and
walnuts. Sift the flour with the
baking soda and salt and add to
the batter alternately with the
butter-milk, beginning and ending
with the flour mixture. Pour
into a 9 X 9 inch oiled and floured
square cake pan. Bake 30 to 40
minutes. Yield: 12 servings.
FROSTING
1/2 cup soft margarine
2 tablespoons sherry
2 cups confectioners" sugar
Cream together

Thanksgiving is traditionally
the time of year for us to appreciate
our blessings. It is -also
the time for us to be thankful for
our health and happiness. The
Nassau Heart Association wants
all of us to remain healthy and
suggests one way to do this is to
maintain a low-cholesterol 'fat
and calorie conscious* menu.
Eating is one of lifes great
pleasures. The American Heart
Association Cookbook, published
by David McKay Co., Inc. is
dedicated to the pleasures of
eating well while eating right.
This Thanksgiving, the
following recipes are recommended
to complement your
turkey dinner:
APPLE STUFFING
l/4 cup chopped onions
V4 cup chopped celery
2 tablespoons margarine
4 cups dry bread cubes
1 cup diced unpeeled apples
Vfetsp. Poultry seasoning
v2 tsp. dried sage
l/4 tsp. salt
Va tsp. ground black pepper
1 chicken bouillon cube
Vfe cup hot water
Cook onions and celery in
margarine for 5 minutes, or until
tender. Dissolve bouillon cube in
hot water. Combine onions and
celery with all other dry
ingredients. Add bouillon and
toss lightly. Use to stuff a turkey,
(10-12 pound turkey)
STUFFED ZUCCHINI
4 medium zucchini
Vz cup chopped mushrooms
2 tablespoons oil
1 onion, diced
1 clove garlic, crushed
1 slightly beaten egg
J/4 tsp. marjoram
1 tsp. minced parsley
ground pepper
salt to taste
Preheat oven to 350 degrees F.
Wash zucchini and scrub
lightly to remove any grit or wax.
Parboil for 10 minutes. Drain,
cool and split lengthwise.
Remove pulp and chop it finely.
Saute garlic in oil until golden
brown. Discard garlic and saute
mushrooms in the oil with the
onions. 'Add herbs, salt, pepper
and zucchini pulp. Cool. Mix in
the slightly beaten egg, and fill
The table was set, with candles
aglow,
With crystal, china and silver
agleaming.
Then a champagne toast, by our
handsome host
To Joan and Michael on pledging
bethrothal - 'twas lovely.
We gave our thank<and asked for
blessing.
As Briap proceeded to tackle the
carvings.
And have you heard, the latest
way to stuff the bird?
(Ask what happened to the
giblets.)
The gravy was made by our
gravy queen
And so good, we licked the
- platters clean.

With coffee and pie and desserts
galore.
Now we were stuffed - but never
mind - 'twas lovely.'
And the piece de resistance
throughout the day
Was not the turkey or stuffing, or
all the rest:
But a mite of a baby called Susan
Marie
Who sat there enjoying and being
enjoyed
By grandmas and grandpas and
uncles and aunts,
To say nothing of the young,
proud parents.
Ah. - 'twas lovely. - 'twas lovely.'
